This Sausage Apple Cranberry Stuffing is so easy and SO flavorful! Savory sausage, sweet apples, tart cranberries with fresh herbs, and buttery toasted breadcrumbs. It's seriously the best thing ever and the absolute perfect side dish for Thanksgiving dinner!

Ingredients

  • 1 Tbsp olive oil (15g)
  • 1 medium onion (220g) diced
  • 2 stalks of celery (115g) diced
  • 1 lb. lean breakfast sausage
  • 1 tsp salt
  • freshly ground black pepper to taste
  • 2 Tbsp fresh sage chopped
  • 2 Tbsp fresh parsley chopped
  • 1 medium yellow golden delicious apple (175g) cored and diced
  • 1/2 cup reduced-sugar dried cranberries (80g)
  • 2 cups chicken stock (480g) or turkey stock
  • 12- oz. sage and onion stuffing (340g) about 6 cups - I used Pepperidge Farms cubed stuffing
  • 2 Tbsp melted butter (30g)

Instructions

  • Preheat the oven to 350 degrees. Spray a 9x13-inch baking dish with cooking spray.
  • Heat olive oil over medium heat. Add onions and celery and cook for about 4-5 minutes or until softened. Add the sausage, breaking up as it browns. Once sausage is cooked through, season with salt and pepper; stir in the fresh herbs.
  • Then stir in the diced apples, cranberries, bread crumbs and chicken stock.
  • Transfer the stuffing mixture to the prepared dish. Drizzle melted butter over the stuffing and cover tightly with foil.
  • Bake for 25 minutes covered, then for another 20 uncovered until stuffing is lightly toasted. Sprinkle with additional fresh herbs before serving.

Notes

To make gluten-free: use gluten-free stuffing.
To make dairy-free: use dairy-free butter.
