5-Minute Breakfast BLT with Egg Whites and Cheese

Who doesn’t love a good breakfast sandwich?? This Breakfast BLT takes 5 minutes to come together and is perfect when you need something quick and packed with protein that will hold you over for hours. Enjoy at home or throw in a container or sandwich bag and take on the go!

Ingredients

  • 1/4 cup + 2 Tbsp egg whites (90g) can sub for egg or egg + egg white mixture if desired
  • 2 pieces of bread* I used Dave's Killer thin sliced
  • 2 slices cooked bacon I used Boar's Head thick cut bacon
  • 1 slice cheese I used Sargento thin sliced cheddar cheese
  • 1-2 slices tomato
  • 1-2 pieces of lettuce I used Boston lettuce but any lettuce or spinach works or you can omit completely
  • Condiments of choice - like mustard, light mayo, hot sauce, guacamole, etc.

Instructions

  • Spray a small microwave safe bowl with nonstick cooking spray. Add the egg whites and season with salt and pepper to taste. Microwave for 1.5-2 minutes or until egg whites are cooked through.
  • Meanwhile, toast your bread and slice your tomato.
  • Put any condiments on bread if using. Then layer with the cheese, egg, bacon, tomato and lettuce. Add the other slice of bread on top, cut in half and enjoy!

Notes

*Use your favorite bread here! Macros should be similar enough that I wouldn't sweat it, but if you are using a lot of different brands and you wish, you can always log each ingredient separately. For reference, my bread had 17g of carbs per slice.
