These healthy Chocolate Peanut Butter Oat Bars make such a great snack! They're stuffed with the most delicious homemade chocolate peanut butter spread and come together quickly for a tasty treat that’s pretty healthy and even packed with a little protein.

Ingredients

Oat Bars:

  • 3 cups old fashioned oats (240g)
  • 1/2 cup peanut butter (112g)
  • 1/4 cup pure maple syrup (60g)
  • 1/8 tsp salt

Chocolate Peanut Butter:

  • 1/2 cup peanut butter (112g)
  • 1/3 cup cocoa powder (35g)
  • 1/4 cup pure maple syrup (60g)
  • pinch of salt
  • 2 tsp vanilla extract optional for more flavor

Instructions

  • Line an 8x8-inch dish with parchment paper.
  • Combine the oat bar ingredients. Press half of the oat bar mixture into the bottom of the dish and place in the freezer while you make the nutella.
  • Combine all the ingredients for the nutella then spread evenly on top of the first layer of oats.
  • Add back to the freezer for 5-10 minutes then remove and add the rest of the oat mixture on top; spread out evenly. I used a piece of parchment paper sprayed with nonstick cooking spray to help press the top layer down and get it even. The longer you keep it in the freezer, the firmer it gets and the easier it will be to work with.
  • Leave in the freezer for at least 30 minutes before slicing into bars.

Notes

To make gluten-free: this recipe is gluten-free (just ensure the oats you are using are certified gluten-free).
To make dairy-free: use dairy-free chocolate chips (if using). I love Enjoy Life chocolate chips.
