Ingredients

  • 1.25 lb. brussels sprouts trimmed and halved
  • 1 Tbsp olive oil
  • Cooking spray
  • Salt and pepper to taste
  • 2 tsp balsamic glaze or reduction 10g
  • 1 Tbsp brown sugar 12g

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper for easy clean up.
  • Add the Brussels sprouts to the baking sheet. Light spray with cooking spray, drizzle with olive oil, season with salt and pepper, and toss with your hands to evenly coat.
  • Arrange the sprouts with the flat side down and bake for 15 minutes.
  • Remove the baking sheet for the oven and flip sprouts over. Evenly drizzle with balsamic and sprinkle with brown sugar (I would sprinkle the brown sugar across with your hands to do this evenly as brown sugar tends to clump. You only need to put a tiny pinch of sugar on the top of each sprout. It helps with caramelization and takes the edge off the intensity of the balsamic, but you can omit if you wish).
  • Return the baking sheet to the oven and bake for about 10 to 15 minutes, or until sprouts are as caramelized and roasted to your liking.
  • Garnish with grated parmesan cheese, if desired, and serve warm.

Notes

Baking times will vary based on the size of the sprouts used, personal preference for doneness, oven and climate variances, etc. Keep a close eye on them in the last 10 minutes of baking because they can go from underdone to overdone and burnt in just a couple of minutes.
