This Maple Apple Cheddar Sausage Pancake Bake is the ultimate sweet-and-savory breakfast! Fluffy pancakes are baked with juicy apples, savory sausage, melty cheddar cheese, and a touch of maple syrup for the perfect fall breakfast!

Ingredients

  • 16 oz. turkey breakfast sausage
  • 1 large Honeycrisp apple (200g) finely diced
  • 1/2 tsp. rubbed sage
  • 2 Tbsp. pure maple syrup (30g) divided
  • 3 cups Kodiak Cakes Buttermilk Power Cakes Mix (378g)
  • 1 tsp. baking powder
  • 2 cups water (480g)
  • 1/2 cup shredded sharp cheddar cheese (56g)
  • Optional for serving: butter + maple or sugar-free pancake syrup

Instructions

  • Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
  • Add sausage to a large skillet over medium heat. Cook, breaking it into small crumbles, until browned and cooked through. Transfer to a plate.
  • Add the diced apple to the same skillet. Sprinkle with sage and cook for 3–4 minutes, just until it starts to soften but still has some bite.
  • Add 1 Tbsp maple syrup to the apples and cook for another 30–60 seconds, until the apples are lightly glazed. Remove from heat.
  • In a large bowl, whisk together pancake mix and baking powder. Add water and remaining 1 Tbsp maple syrup and stir just until combined. Don't overmix.
  • Pour pancake batter into the prepared baking dish.
  • Sprinkle sausage and maple-sage apples evenly over the batter. Sprinkle cheddar over the top.
  • Bake for 25–30 minutes, or until the center is set and a toothpick inserted into the pancake portion comes out clean.
  • Let cool for 5–10 minutes before slicing into 8 servings. Serve warm with a little butter and maple syrup.

Notes

Store: Let the pancake bake cool completely, then cover tightly or transfer individual portions to airtight containers. Refrigerate for up to 4 days.
To reheat: Microwave individual portions for 30–60 seconds, or until warmed through. You can also reheat them in a 350°F oven until hot.
Freezer: Once cooled, slice into individual portions and wrap each piece tightly in plastic wrap or place in a freezer-safe container. Freeze for up to 2–3 months. Thaw overnight in the refrigerator before reheating.
