This easy Mama’s Meatloaf is the kind of classic, cozy dinner that always hits the spot! Made with simple ingredients, hearty oats, and a flavorful glaze, it’s tender, juicy, and perfect for an easy weeknight meal the whole family will love.
Preheat the oven to 350°F. Lightly grease a 9x13-inch baking dish with cooking spray and set aside.
Add the eggs to a large mixing bowl and lightly beat with a fork or whisk. Add the ground beef, oats, salt, pepper, onion, milk, ketchup, brown sugar, A.1. sauce and parsley. Gently mix until everything is just combined, being careful not to overmix.
Transfer the meat mixture to the prepared baking dish. Using your hands, shape it directly in the dish into a free-form loaf, roughly 9–10 inches long, 5–6 inches wide and about 2½ inches tall (about the general size and shape of a loaf pan). It doesn’t need to be perfect—just try to keep the thickness fairly even so it cooks evenly.
In a small bowl, whisk together the ketchup, brown sugar, Dijon mustard and A.1. sauce until smooth.
Spread the glaze evenly over the top and sides of the meatloaf.
Bake for 40–50 minutes, or until the center of the meatloaf reaches 160°F, beginning to check for doneness around the 40-minute mark.
Let the meatloaf rest for 10 minutes before slicing and serving.

Store leftover meatloaf in an airtight container in the refrigerator for up to 3–4 days.You can reheat individual portions in the microwave until warmed through, or cover the meatloaf with foil and reheat it in a 350°F oven until heated through.You can also freeze leftover meatloaf. Let it cool completely, then wrap individual slices tightly in plastic wrap or foil and place them in a freezer bag or container. Freeze for up to 3 months and thaw overnight in the refrigerator before reheating.
