Ingredients

Sheet Pan

  • 20 oz. baby potatoes cut into 1-inch pieces
  • 1 Tbsp. olive oil (15g)
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1 tsp. salt divided
  • 1/2 tsp. black pepper divided
  • 12 oz. fully cooked chicken sausage sliced —I used Amylu Caramelized Onion & White Cheddar
  • 12 oz small broccoli florets
  • 1/2 medium red onion (80g) thinly sliced

Honey Mustard Glaze

  • 3 Tbsp. Dijon mustard (45g)
  • 2 Tbsp. honey (42g)
  • 1 Tbsp. olive oil (15g)
  • 1 Tbsp. apple cider vinegar (15g)
  • 1/2 tsp. garlic powder

Instructions

  • Preheat the oven to 425°F. Spray a large sheet pan with cooking spray.
  • Add the potatoes to the sheet pan. Toss with olive oil, garlic powder, onion powder, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Arrange the potatoes in a single layer, cut-side down when possible.
  • Roast the potatoes for 20 minutes.
  • Meanwhile, whisk together the Dijon mustard, honey, olive oil, apple cider vinegar and garlic powder in a small bowl.
  • Remove the sheet pan from the oven. Add the sliced chicken sausage, broccoli and red onion. Spray lightly with cooking spray and season with the remaining ½ teaspoon salt and ¼ teaspoon black pepper. Toss everything together and spread into an even layer.
  • Return the sheet pan to the oven and roast for 10 minutes.
  • Remove the pan from the oven and drizzle the honey mustard glaze over the sausage, potatoes and vegetables. Toss until everything is evenly coated, then spread back into a single layer.
  • Roast for another 8–10 minutes, or until the potatoes are tender, the broccoli is roasted and the honey mustard glaze is lightly caramelized. Keep a close eye on it during the final few minutes to prevent the glaze from burning.
  • Toss once more before serving.

Notes

Vegetable Swap: Feel free to swap the broccoli for a broccoli medley (broccoli, cauliflower, and carrots) for extra color and variety! Just keep the total amount of vegetables the same.
