If you love a good cheesy casserole, you need to try this Honey Mustard Chicken Enchilada Casserole! It’s creamy, cozy, super easy to throw together, and has that sweet and tangy honey mustard flavor that makes it a little different from your usual enchilada night.
Preheat the oven to 375°F. Spray an 8x8-inch baking dish with cooking spray.
Make the honey mustard sauce: In a large mixing bowl, stir together the Greek yogurt, cottage cheese, mayonnaise, yellow mustard, Dijon, honey, vinegar, garlic powder, black pepper, and salt until well combined.
Add the filling: Add the shredded chicken, carrots, bell pepper, corn, red onion and 1/2 cup of the cheddar cheese. Stir until everything is evenly coated in the honey mustard mixture.
Spread about 1/3 of the chicken mixture in the bottom of the baking dish. Top with half the tortilla halves, then another 1/3 of the chicken mixture. Repeat with the remaining tortillas and finish with the final 1/3 of the chicken mixture.
Sprinkle the remaining 3/4 cup of cheddar cheese over top.
Bake: Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10–15 minutes, or until the casserole is hot throughout and the cheese is melted.
Rest for 5–10 minutes before serving.
