Ingredients

Bowls

  • 1.5 lbs baby potatoes
  • 1 Tbsp. olive oil (15g)
  • Salt + black pepper to taste
  • 4 atlantic salmon fillets 4–5 oz each
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 large romaine heart chopped
  • Shaved or grated parmesan cheese
  • Lemon wedges for serving
  • Optional: Crispy chickpeas, croutons, fresh parsley

Caesar Dressing

  • 3/4 cup plain nonfat Greek yogurt (170g)
  • 2 Tbsp. grated parmesan cheese
  • 1 Tbsp. lemon juice (15g)
  • 1 tsp. Dijon mustard
  • 1 small garlic clove grated
  • 2 tsp. Worcestershire sauce
  • Salt + pepper to taste
  • Water as needed to thin

Instructions

  • Preheat the oven to 425 degrees F. Add the potatoes to a sheet pan and roast for 20 minutes. Remove from the oven and gently smash each potato using the bottom of a glass or measuring cup. Drizzle with olive oil and season with salt and pepper. Return to the oven for another 15–20 minutes until crispy.
  • Meanwhile, season the salmon with garlic powder, paprika, salt, and pepper. Air fry or bake until cooked through and flaky.
  • To make the dressing, whisk together the Greek yogurt, parmesan, lemon juice, Dijon, garlic, Worcestershire, salt, and pepper. Add water as needed until smooth and drizzleable.
  • Assemble bowls with chopped romaine, crispy smashed potatoes, salmon, parmesan, and Caesar dressing. Finish with lemon wedges and any optional toppings.

Notes

These bowls are best enjoyed fresh, but you can store the individual components separately for meal prep.
Store the cooked salmon and smashed potatoes in airtight containers in the refrigerator for up to 3–4 days. Store the chopped romaine separately to keep it crisp, and keep the dressing in a separate container until ready to serve.
To reheat, warm the salmon and potatoes in the microwave or air fryer. For the best texture, I prefer reheating the potatoes in the air fryer or oven until crisp again. Assemble with the fresh romaine, Parmesan, and dressing just before eating.
The Caesar dressing can be stored in an airtight container in the refrigerator for up to 4–5 days. You may need to stir in a splash of water or lemon juice before serving if it thickens in the refrigerator.
