This Cheesy Turkey Taco Rice Bake is an easy, family-friendly dinner made with seasoned ground turkey, rice, black beans, corn, and plenty of melty cheese. A flavorful meal that’s perfect for busy weeknights!

Ingredients

  • 1 lb lean ground turkey 93/7
  • 1 (1 oz) packet taco seasoning
  • 2 cups cooked white rice
  • 3/4 cup chunky salsa (180g)
  • 1/2 cup plain Greek yogurt (120g)
  • 3/4 cup black beans (180g) rinsed and drained
  • 1/2 cup corn
  • 1/3 cup diced red onion (40g)
  • 1/2 cup shredded Mexican cheese divided
  • Optional for topping: shredded lettuce, diced tomatoes or pico de gallo, sour cream or plain Greek yogurt), avocado, etc.

Instructions

  • Preheat the oven to 375 degrees F. Spray an 8x8-inch baking dish with cooking spray.
  • Heat a large skillet over medium heat. Add the ground turkey and cook, breaking it up as it browns, until cooked through. Stir in the taco seasoning.
  • In a large mixing bowl, add the cooked turkey, cooked rice, salsa, Greek yogurt, corn, black beans, half the shredded cheese and red onion. Stir until well combined.
  • Transfer the mixture to the prepared baking dish and spread out evenly. Sprinkle the remaining cheese over top.
  • Cover with foil and bake for 15 minutes. Remove the foil and bake for another 8–10 minutes, or until the cheese is melted and the edges are hot and bubbly.
  • Let cool for 5 minutes. Top with shredded lettuce, pico de gallo or diced tomatoes, Greek yogurt or sour cream, and avocado, if desired, and enjoy!

Notes

Store leftover turkey taco bake in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave until warmed through, or cover the baking dish with foil and reheat in the oven.
You can also freeze the baked casserole. Let it cool completely, then portion into freezer-safe containers and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
