Say hello to your new favorite sheet pan dinner! Juicy Moroccan-spiced chicken and tender sweet potatoes come together with a touch of honey for an easy, flavor-packed meal. Great for busy weeknights or meal prep.
1large sweet potato (300g)peeled and cut into 1/2-inch cubes
1Tbsp.olive oil (15g)
1/3of the Moroccan spice blend
1/2tsp.salt
1/8tsp.black pepper
Chicken:
1lbboneless chicken breastcut into 1-inch pieces
1Tbsp.olive oil (15g)
Remaining 2/3 of the Moroccan spice blend
1tsp.salt
1/4tsp.black pepper
1Tbsp.honey
Instructions
Preheat the oven to 425°F. Lightly grease a large sheet pan with cooking spray.
In a small bowl, stir together the smoked paprika, cumin, garlic powder, onion powder, coriander, cinnamon, and red pepper flakes.
Add the sweet potatoes to a medium bowl and toss with the olive oil, ⅓ of the spice blend, salt, and black pepper. Add to the sheet pan and spread into an even layer.
Roast the sweet potatoes for 10 minutes.
Meanwhile, add the chicken to a medium bowl. Toss with the olive oil, remaining spice blend, salt, black pepper, and honey until evenly coated.
Stir and flip the sweet potatoes, then move to one side of the sheet pan. Add the chicken to the other side and spread into an even layer. Roast for another 10–12 minutes, or until the sweet potatoes are tender and the chicken is cooked through and reaches an internal temperature of 165°F.
Notes
Allow the chicken and sweet potatoes to cool completely before storing in an airtight container in the refrigerator for up to 4 days.Reheat in the microwave until warmed through, or warm in a 350°F oven for about 10 minutes. For the best texture, avoid overcooking the chicken when reheating.
