Goat Cheese Chicken Puff Pastry Pizza

This Goat Cheese Chicken Puff Pastry Pizza is one of my go-to recipes when I need something quick, easy, and delicious. I love how versatile it is, and it’s perfect for using up leftovers or switching up toppings with whatever you have on hand!

Ingredients

  • 2 cups chopped grilled chicken* (200g) (~ 2 cooked breasts)- or shredded rotisserie/any cooked chicken
  • 1 puff pastry sheet thawed if frozen
  • 2 Tbsp. light mayo (30g)
  • 2 oz. goat cheese** crumbled
  • 1/4 cup red onions thinly sliced or finely diced***
  • 1 egg beaten, for egg wash
  • 1 Tbsp. honey for drizzling
  • Arugula or baby spinach optional to top
  • Grated parmesan optional to top

Instructions

  • Preheat the oven to 425 degrees F. Grease a baking sheet with nonstick spray and lay the puff pastry sheet on top. Gently poke the pastry all over with a fork (so it doesn’t puff up too much).
  • Spread mayonnaise over puff pastry, leaving about a 1-inch rim along the border.
  • Add the chopped chicken over the mayo, then top with the goat cheese and onions.
  • Lightly brush the outside border with egg wash.
  • Bake for about 20-22 minutes, until the crust is lightly browned and flaky.
  • Remove from the oven. Let cool slightly.
  • Drizzle with honey. Top with arugula and grated parmesan, if desired, then slice and enjoy!

Notes

Love the versatility of this one. A great go-to when you need something quick and EASY!
*Any cooked chicken works. If plain, add some seasoning to jazz it up. 
**Buy the goat cheese log and crumble instead of buying it already crumbled…instantly elevates! 
***Use a mandoline to slice onions very thin…also, pickled onions taste amazing on this!
