This Goat Cheese Chicken Puff Pastry Pizza is one of my go-to recipes when I need something quick, easy, and delicious. I love how versatile it is, and it’s perfect for using up leftovers or switching up toppings with whatever you have on hand!
Preheat the oven to 425 degrees F. Grease a baking sheet with nonstick spray and lay the puff pastry sheet on top. Gently poke the pastry all over with a fork (so it doesn’t puff up too much).
Spread mayonnaise over puff pastry, leaving about a 1-inch rim along the border.
Add the chopped chicken over the mayo, then top with the goat cheese and onions.
Lightly brush the outside border with egg wash.
Bake for about 20-22 minutes, until the crust is lightly browned and flaky.
Remove from the oven. Let cool slightly.
Drizzle with honey. Top with arugula and grated parmesan, if desired, then slice and enjoy!
