These Chimichurri Steak Bites are bold, flavorful, and ready in just 20 minutes. They’re perfect for a quick weeknight dinner or protein-packed meal prep option. Juicy, tender steak is seared to perfection and tossed with a vibrant, herby, fresh chimichurri sauce that brings zesty flavor to every bite.

Ingredients

Steak bites:

  • 1.25 lb. top sirloin or flank steak
  • 2 Tbsp olive oil (30g)
  • 1 tsp salt
  • 1/2 tsp chili powder
  • 1/4 tsp black pepper

Chimichurri sauce:

  • 1/2 cup cilantro loosely packed
  • 1/2 cup parsley loosely packed
  • 1/2 cup chopped onion (90g)
  • 2 garlic cloves minced
  • 1 tsp oregano
  • 1/4 tsp crushed red pepper
  • 1/4 cup extra virgin olive oil (60g)
  • 2 Tbsp red wine vinegar (30g)
  • Salt & black pepper to taste

Instructions

  • Chimichurri sauce: Add all ingredients to a food processor or blender and pulse until smooth. Store in the fridge until ready to use.
  • Steak bites: Cut steak into bite-sized pieces. Add to a bowl with the olive oil and seasonings and toss until evenly coated. *marinate in the fridge for 30 minutes, up to overnight, if desired.
  • Heat a cast iron or heavy bottomed skillet over medium-high heat. Grease if needed. Add the steak and cook for 7-8 minutes or until all sides are browned, flipping/ tossing halfway through.
  • Remove from heat. Let sit for 10 minutes then serve with chimichurri sauce and enjoy!

Notes

  • Store: Store steak bites and chimichurri sauce in an airtight container in the fridge for 3-5 days.
  • To reheat: Reheat steak bites in a skillet for 4-5 minutes or until warmed through. You can also reheat steak bites in the air fryer at 350°F for 2-3 minutes or until warmed through.
