If you love the flavors of classic strawberry shortcake, you’re going to flip for this strawberry shortcake granola. It’s buttery, golden, and packed with sweet strawberries. Perfect on its own or sprinkled over a delicious Greek yogurt parfait for a high-protein twist on the dessert you know and love.
Add the oats, pecans, almonds, coconut flakes, salt, honey, coconut oil, vanilla and half of the sugar to a mixing bowl. Mix together.
Crush the freeze dried strawberries, still leaving some small pieces, then add to the mixing bowl with the egg whites. Mix together well, then spread onto a nonstick baking sheet.
Bake for 15 minutes. Stir, and bake for another 10 minutes or so, until fragrant and golden brown. Watch carefully as not to burn (especially the coconut). Remove from the oven. Toss with remaining sugar. Drizzle melted white chocolate evenly over top.
Allow the white chocolate to set and the granola to cool and get crunchy right on the pan.
To Make Parfaits:
Cut strawberries into small pieces and mash slightly with a fork to get slightly juicy and jammy. Mix with a little sugar. Layer yogurt, strawberries and granola in a jar or bowl and enjoy!
