This Blueberry Balsamic Vinaigrette is a fresh, fruity dressing that adds a pop of flavor to any salad. Made with sweet, juicy blueberries, tangy balsamic vinegar, a touch of honey, and a hint of lemon. It’s the kind of dressing that instantly elevates any summer meal!

Ingredients

  • 1/2 cup fresh blueberries (70g) rinsed
  • 1/2 cup extra virgin olive oil (120g)
  • 2 Tbsp honey (42g)
  • 2 Tbsp balsamic vinegar (30g)
  • 1 Tbsp fresh lemon juice or to taste
  • 1 garlic clove minced
  • salt & pepper to taste

Instructions

  • To a small blender or food processor, add the blueberries, olive oil, honey, balsamic vinegar, lemon juice and garlic. Pulse/blend until well combined.
  • Taste. Season with a tiny pinch of salt and pepper, or to your taste. Add more honey or any other ingredient as needed.
  • Store in an airtight container in the fridge.

Notes

Will keep fresh for 5-6 days stored airtight in the fridge. Natural oil separation will occur, just give it a good stir before using.
