These Strawberries & Cream French Toast Roll-Ups are the perfect sweet start to your day. Filled with a creamy, tangy filling and fresh, juicy strawberries, each roll-up is golden, crisp on the outside, and soft and decadent on the inside. These rolls ups are easy to make, fun to eat, and guaranteed to impress.

Ingredients

  • 12 slices butter bread any sandwich bread
  • 1.5 cups fresh strawberries (210g) diced
  • 1 tsp granulated sugar
  • 3 large eggs
  • 3 Tbsp milk (15g)
  • 1/4 tsp cinnamon
  • 1/4 cup vanilla protein powder (30g) optional
  • 6 Tbsp light cream cheese spread
  • 2 tsp butter for pan

Cinnamon sugar:

  • 2 Tbsp granulated sugar (24g)
  • 2 tsp cinnamon

Instructions

  • Roll each slice of bread with a rolling pin and cut off the crusts.
  • Add diced strawberries to a small bowl and toss with 1 tsp sugar; set aside.
  • In a shallow bowl, whisk the eggs, milk, cinnamon and protein powder (if using) until completely combined.
  • Spread cream cheese over the bread, then place diced strawberries on one end, using about 2 teaspoons for each. Carefully roll up tightly and place on a plate.
  • Dip each roll up in the egg mixture, coating completely.
  • In a skillet, melt the butter over medium heat. Place the roll ups seam side down and pan fry, turning occasionally, until they are golden brown on all sides.
  • Meanwhile get cinnamon sugar ready by mixing the sugar and cinnamon in a shallow bowl.
  • Remove roll ups from skillet and coat in the cinnamon sugar mixture. Serve and enjoy!

Notes

Store leftover roll ups in an airtight container in the refrigerator for up to 3 days.
There are several ways to reheat these french toast roll ups.
  • Oven: Reheat in a 350-degree oven for 10 minutes or until warmed through.
  • Microwave: Microwave in 30-second increments until heated through. 
  • Stovetop: Reheat on the stovetop by placing a little butter (or oil) in a skillet over medium heat until crisp on the outside and heated through.
  • Air fryer: Reheat in the air fryer at 350F for 3-5 minutes, or until heated through.
