These Strawberries & Cream French Toast Roll-Ups are the perfect sweet start to your day. Filled with a creamy, tangy filling and fresh, juicy strawberries, each roll-up is golden, crisp on the outside, and soft and decadent on the inside. These rolls ups are easy to make, fun to eat, and guaranteed to impress.
Roll each slice of bread with a rolling pin and cut off the crusts.
Add diced strawberries to a small bowl and toss with 1 tsp sugar; set aside.
In a shallow bowl, whisk the eggs, milk, cinnamon and protein powder (if using) until completely combined.
Spread cream cheese over the bread, then place diced strawberries on one end, using about 2 teaspoons for each. Carefully roll up tightly and place on a plate.
Dip each roll up in the egg mixture, coating completely.
In a skillet, melt the butter over medium heat. Place the roll ups seam side down and pan fry, turning occasionally, until they are golden brown on all sides.
Meanwhile get cinnamon sugar ready by mixing the sugar and cinnamon in a shallow bowl.
Remove roll ups from skillet and coat in the cinnamon sugar mixture. Serve and enjoy!
