This Grilled Chicken Pesto Pasta Salad is fresh, flavorful, and perfect for easy meal prep. Made with juicy chicken, tender pasta, crisp cherry tomatoes, and creamy mozzarella all tossed in a vibrant, herby pesto sauce for a dish that’s as satisfying as it is simple.

Ingredients

  • 10 oz. rotini or other short pasta
  • 1/4 cup basil pesto (60g)
  • 2 Tbsp fresh lemon juice (30g)
  • 2 tsp extra virgin olive oil (10g)
  • 12 oz. chopped grilled chicken ~2 cups
  • 4 oz. small mozzarella pearls
  • 1 cup baby spinach stems removed & roughly chopped
  • 1 cup cherry tomatoes (180g) halved
  • Salt and pepper to taste

Instructions

  • Fill a large pot with water, salt generously and bring to a boil. Once boiling, add pasta and reduce heat; cook according to package directions until al dente. Then drain, rinse with cold water and set aside.
  • Whisk the pesto, lemon juice and olive oil in a large bowl until combined. Add the cooked pasta and toss to evenly coat.
  • Add the chopped grilled chicken, mozzarella, spinach and tomatoes and toss to combine. Taste and season with salt and pepper as needed.
  • Serve immediately or wrap tightly and refrigerate until ready to serve.

Notes

This pasta salad will stay fresh for up to 5 days in the refrigerator in an airtight container.
