Bright, zesty, and packed with protein, these Lemon Bliss Protein Balls  are the perfect light snack or dessert. They’re bursting with fresh lemon flavor and subtle crunch from the poppy seeds. These balls deliver all the nostalgic charm of lemon poppy seed muffins—but in bite-sized form!

Ingredients

  • 1/2 cup roasted cashews (65g)
  • 1/2 cup rolled oats (48g)
  • 1/3 cup vanilla protein powder (40g)
  • 1/4 cup shredded coconut (30g)
  • 3 Tbsp honey (63g)
  • 2 Tbsp sunflower butter (30g) can sub any nut butter
  • 2 Tbsp ground flax (13g)
  • 2 Tbsp fresh lemon juice (30g)
  • 1 Tbsp lemon zest
  • 2 tsp poppy seeds

To coat:

  • 1/4 cup shredded coconut
  • 2 tsp lemon zest optional

Instructions

  • Add the cashews to a food processor and pulse until fine.
  • Add all the remaining ingredients except the poppy seeds and pulse to combine. Scrape the sides as needed and pulse until a thick, well-combined dough forms. Pulse in the poppy seeds or transfer to a bowl and mix in by hand.
  • Use a small cookie scoop to measure/scoop dough out, about a heaping tablespoon in size, and roll into balls.
  • Coat balls in shredded coconut and lemon zest if desired.
  • Chill for at least 30 minutes. Then enjoy!

Notes

Keep stored in an airtight container in the freezer or fridge.
