These Buffalo Chicken Dip Lunchables are the perfect way to enjoy your favorite game-day dip in a fun, packable meal! This easy, protein-packed snack box includes creamy, cheesy buffalo chicken dip paired with crunchy dippers for a balanced and satisfying bite.

Ingredients

  • 12 oz. cooked shredded chicken
  • 2 cups small curd cottage cheese (440g)
  • 1/2 cup shredded sharp cheddar (56g)
  • 1/4 cup shredded mozzarella (28g)
  • 1/3 cup buffalo sauce (80g) or to taste
  • 2 Tbsp chopped green onions
  • 1 regular or English cucumber (200g)
  • 88 bite-size tortilla chips (112g)
  • 16 baby carrots (144g)

Instructions

  • Add the chicken, cottage cheese, mozzarella, cheddar cheese, buffalo sauce and green onions to a bowl. Mix until well combined.
  • Divide and scoop the buffalo chicken into four microwave-safe containers (240g each).
  • Cut the cucumber into slices (peeling it first if you like). Divide the cucumber, tortilla chips and carrots between the four containers. Store chips in a ziploc bag to keep crispy (and the veggies too if you’d like for easy removal).
  • When ready to eat, remove chips and veggies and microwave buffalo chicken dip for 1:30-2 minutes or until warmed to liking. Stir well to mix the melted cheeses.
  • Serve with the chips, cucumbers and carrots and enjoy!

Notes

 used Good & Gather shredded chicken from Target to make this extra easy. You can also use rotisserie chicken, canned chicken or any cooked chicken you have on hand.
