These BBQ Chicken Shells & Cheese Bowls are easy, flavor-packed and perfect for meal prep. They combine tender shredded BBQ chicken with creamy, cheesy pasta shells and fiber-rich broccoli for a comforting meal that’s perfect for meal prep or a quick weeknight dinner.

Ingredients

  • 1 lb. boneless chicken breast
  • 2 tsp paprika
  • 1 tsp packed brown sugar
  • 1/2 tsp each salt, garlic powder, onion powder, chili powder
  • 1/4 tsp black pepper
  • 1 tsp olive oil (5g)
  • 12 oz. shells & cheese I used Velveeta
  • 12 oz. frozen steamable broccoli florets
  • 1/4 cup BBQ sauce (60g) I used Stubb’s

Instructions

  • Chicken: Cut chicken into small bite size (about 1/2-inch) pieces. Add to a bowl or ziploc bag along with brown sugar, salt and all the spices. Toss well to evenly coat the chicken.
  • Heat a skillet over medium-high heat. Add the oil and once shiny, add the chicken. Cook for 3-4 minutes undisturbed, then toss/flip; cook for another 3-4 minutes or until cooked through.
  • Remove from heat.
  • Broccoli: Heat in microwave according to package directions.
  • Shells & Cheese: Add water to a saucepan or pot and bring to a boil. Add the shell pasta and cook to al dente according to package directions. Drain (but do not rinse). Stir in the cheese sauce. Salt and pepper to taste.
  • Build bowls: Divide the shells and cheese, chicken bites and broccoli between four bowls/containers. Add the BBQ sauce over the chicken or add later when ready to eat and enjoy!

Notes

Store bowls in airtight container in the fridge for 3-4 days.
