Looking for a quick, protein-packed breakfast or snack that doesn’t skimp on flavor? This Grape & Walnut Cottage Cheese Toast is the perfect balance of creamy, crunchy, and naturally sweet. The tang of cottage cheese perfectly pairs with the sweet juicy grapes, while the chopped walnuts add a satisfying crunch.

Ingredients

  • 2 slices whole grain thin-sliced bread
  • 1 5.3-oz. container small curd cottage cheese ~ 2/3 cup
  • Salt & cracked black pepper
  • 2 Tbsp finely chopped walnuts (15g)
  • 10 red grapes (80g) chopped or quartered
  • Honey optional for drizzling

Instructions

  • Toast bread in a toaster or by broiling in the oven, with a little butter or cooking oil spray if desired.
  • Allow toast to cool down some then spread cottage cheese on top of both slices.
  • Sprinkle a little salt and black pepper over top (to taste– but don’t skip completely because even a little helps brings out all the flavors!)
  • Top with the grapes and chopped walnuts. Drizzle with honey if desired and enjoy!

Helpful Tips
  • Choose the right bread: Make sure to use a sturdy whole-grain or sourdough bread that can hold up to the toppings without getting soggy. 
  • Toast the bread: Toasting the bread will also help it to keep its crunch and be able to hold the toppings so you can easily eat this toast without it falling apart.  
  • Use good quality cottage cheese: The reason I prefer to use a small curd cottage cheese is so that it isn’t too liqudy making the toast too soft. If your cottage cheese seems liquidy, try to stir it up really well or drain some of the excess liquid or else it will make your toast soggy.
  • Toast the walnuts: To really elevate the nutty flavor of this toast, you can lightly toast the walnuts (or nuts of choice) in a small pan for a few minutes to really enhance the flavor.
