Warm, comforting, and packed with nostalgia, this Chicken and Stars Soup is the ultimate cozy meal. This homemade version of the childhood classic features juicy chicken, tender vegetables, star-shaped pasta, and a flavorful broth. A perfect cozy meal that both toddlers and adults will love!

- 2 Tbsp unsalted butter (28g)
- 1.5 cups finely diced carrots (225g)
- 1/2 cup finely diced yellow onion (80g)
- 3 garlic cloves minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp tumeric & poultry seasoning optional
- 1 cup 6 oz. cooked shredded chicken
- 8 cups 64 oz. chicken broth
- 2 cups 16 oz. chicken bone broth
- 1 cup 6 oz. star pasta look for stelline or pastina
- Optional to garnish: minced parsley, grated parmesan
Heat the butter in a large pot or dutch oven over medium heat. Add the carrots, onion, garlic, salt and pepper. Cook, stirring occasionally for about 5 minutes or until vegetables have softened. Stir in the poultry seasoning and tumeric (if using); stir in the shredded chicken.
Pour in the chicken broth and bone broth and bring to a boil. Add the pasta and reduce heat to a simmer. Cook, stirring occasionally until pasta is al dente, about 7-8 minutes.
Carefully taste the soup and add more salt and pepper as needed.
Serve hot garnished with minced parsley or grated parmesan if desired and enjoy!
The pasta absorbs a lot of the broth after being stored. If you want more broth, just pour in some extra chicken broth (or chicken bone broth) to your portion when reheating.
You can always add more shredded chicken to boost the protein (was trying to keep this one more toddler friendly!) Also, chicken bone broth is high in protein so adding some to my bowl when reheating is one of my favorite ways to up the protein!
