2cupscooked rice (280g)any kind, I used sticky rice
4cupschopped romaine or green leaf lettuce (240g)
4Tbspfinely grated parmesan (48g)48g
4Tbsplite Caesar dressingI used Ken’s
Instructions
Whisk the paprika, salt, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper and black pepper together then toss the salmon bites with the seasoning mix.
Spray air fryer basket with cooking spray. Add the salmon bites (with space in between so they aren’t touching). Cook at 400F for 5 minutes then toss/flip and cook another 5 minutes, or until the salmon is no longer pink.
Meanwhile, prepare the salad. If serving immediately you can go ahead and toss the chopped lettuce, parmesan and caesar dressing together. Otherwise if planning to eat some later, wait to add dressing until ready to serve. Season with a little salt and cracked black pepper to taste.
Divide everything between four bowls. Top with extra parmesan or dressing if desired and enjoy!
