These Pesto Grilled Chicken Wraps are perfect for a quick lunch or dinner! Made with tender grilled chicken, vibrant basil pesto, and juicy tomatoes, then wrapped in a soft tortilla for a satisfying, easy-to-eat meal.
Chop the grilled chicken into small pieces and add to a large bowl. Add the pesto, shaved parmesan, mayo, lemon juice, salt and pepper. Mix until well combined. Stir in the tomatoes.
You can go ahead and make all four wraps or prep one at a time. Cover tortilla(s) with a damp paper towel and microwave for 30 seconds.
Lay the tortilla out. Scoop chicken pesto mixture in the middle–about a heaping 1/2 cup (130g) – for each wrap. Fold the sides and then roll up tightly like a burrito.
Microwave for 30 seconds, or until parmesan is melted and chicken is warmed. (If desired, you can toast the sides up by searing in a hot pan with a little oil for about 2-3 minutes each side.)

Chicken: I used grilled chicken skewers from Costco to make these quick and easy but any cooked chicken will work! Rotisserie or shredded chickenTortillas: use any type of flour tortillas... regular, whole wheat, spinach, high fiber..
