Ingredients

  • 16 oz. cottage cheese I used low-fat good culture
  • 1/2 cup grated parmesan (56g)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • salt & black pepper a pinch or to taste
  • 1 cup marinara sauce (240g)
  • 1 cup shredded mozzarella cheese (112g)
  • 20 slices turkey pepperoni I used Applegate
  • Crushed red pepper flakes optional

For serving:

  • 4 mini naan, naan dippers or pita bread (cut into small triangles)
  • Side salad, carrots, or sweet baby peppers optional

Instructions

  • Preheat the oven to 350 degrees F. Place bread triangles on a baking sheet. Add a little olive oil or cooking spray, toss with the bread and spread out. Also, place four oven-safe dishes on the baking sheet.
  • Add cottage cheese to a food processor or blender and blend until smooth.
  • Stir in the grated parmesan, garlic powder, Italian seasoning, salt and pepper.
  • Divide cottage cheese mixture evenly amongst the four dishes for the first layer. Smooth the top.
  • For the next layer, spoon 1/4 cup marinara sauce into each. Then top each with 1/4 cup shredded mozzarella and 5 pepperoni slices. Sprinkle with crushed red pepper flakes if desired.
  • Bake for 10-15 minutes or until the cheese is melted and bubbly.
  • Serve hot with toasted bread + extra parmesan if desired and enjoy!

Notes

Leftovers can be reheated in the microwave or in the oven.
