These Marry Me Chicken Bites turn your favorite chicken recipe into tender, juicy morsels! These delicious chicken bites are coated in a rich, creamy sauce with sun-dried tomatoes, garlic, and fresh parmesan cheese. Serve these chicken bites with your favorite rice or pasta for a delicious weeknight meal!

- 1/4 cup all-purpose flour (28g) GF if needed
- 1/2 tsp each: salt black pepper & paprika
- 1 lb. boneless chicken breasts cut 1/2-inch pieces
- 2 Tbsp unsalted butter (28g)
- 2-3 cloves garlic minced
- 1/2 cup chicken broth (120g)
- 1/2 cup half and half (120g)
- 1/4 cup fresh grated parmesan cheese (28g)
- 1/2 tsp Italian seasoning
- 1/4 cup sundried tomatoes (30g) chopped
Whisk the flour, salt, pepper and paprika together.
Cut the chicken into small pieces, about 1/2-inch (you’ll have a lot) then dry with a paper towel and place in a large bowl or ziploc bag. Add the flour mixture and toss until the chicken is evenly coated.
Melt half the butter over medium heat in a large skillet, preferably stainless steel or cast iron. Move the pan around to spread the butter. Once hot, add half of the chicken bites leaving a little space in between them so they aren’t touching. Sear undisturbed for 3-4 minutes. Then toss around and cook for another 3-4 minutes or until cooked through (165F internal temp). Toss occasionally and make sure all sides are browned. Transfer to a bowl and set aside. Repeat with remaining butter and chicken.
To the same skillet, add the garlic. Saute until fragrant, about 30 seconds. Deglaze the pan with the chicken broth and use a wooden spoon to scrape any brown bits.
Reduce heat to medium-low, stir in the half and half and parmesan cheese. Simmer for 2-3 minutes.
Mix in the Italian seasoning and sun dried tomatoes. Add the chicken back in and toss with the sauce. Let simmer together for another few minutes.
Serve hot with fresh cracked pepper and grated parmesan and enjoy!
Drying the chicken bites well before tossing with the flour mixture allows the flour mixture to stay on better! This is important because this is where the chicken gets its flavor!
For a creamier sauce, use heavy cream instead of half and half. Or if using half and half or milk, add 1-2 tablespoons of flour when whisking the garlic.
