Elevate your weeknight dinners with this easy one-pan Honey Ginger Chicken Pepper Skillet! Made with tender chicken and peppers tossed in a flavorful honey ginger sauce that is the perfect balance between sweet & tangy!

Ingredients

  • 1.5 lb. boneless chicken breast
  • 2 Tbsp olive oil (30g) divided
  • 4 bell peppers (490g) thinly sliced

Marinade:

  • 3 Tbsp honey (63g)
  • 2 Tbsp balsamic vinegar (30g)
  • 1 Tbsp soy sauce (15g)
  • 1 Tbsp ginger paste or minced
  • 1 tsp salt
  • Fresh cracked pepper

Optional for serving:

  • Cooked rice
  • Sauce of choice

Instructions

  • In a small bowl, whisk together the sauce ingredients.
  • Pat chicken dry with a paper towel. Cut into one inch pieces and add to a bowl. Pour half the marinade overtop. Toss to evenly coat the chicken. Cover and marinate for at least 30 minutes (preferably 2-3 hours). Keep the remaining marinade for later.
  • Heat half the oil in a cast iron skillet over medium-high heat. Once the oil is hot, add the bell peppers. Saute, stirring occasionally for 10 minutes, until tender and charred (if in a cast iron). Transfer to a plate.
  • Heat remaining oil. Add the chicken in a single layer, not touching (cook in batches if needed). Leave undisturbed for 5 minutes, then reduce heat to medium, flip chicken and cook for another 10 minutes or until internal temperature is 165F.
  • Add the peppers back in and pour the sauce over top. Stir and remove from heat.
  • Serve with rice or sauce if desired and enjoy!
