In a small bowl, whisk together the sauce ingredients.
Pat chicken dry with a paper towel. Cut into one inch pieces and add to a bowl. Pour half the marinade overtop. Toss to evenly coat the chicken. Cover and marinate for at least 30 minutes (preferably 2-3 hours). Keep the remaining marinade for later.
Heat half the oil in a cast iron skillet over medium-high heat. Once the oil is hot, add the bell peppers. Saute, stirring occasionally for 10 minutes, until tender and charred (if in a cast iron). Transfer to a plate.
Heat remaining oil. Add the chicken in a single layer, not touching (cook in batches if needed). Leave undisturbed for 5 minutes, then reduce heat to medium, flip chicken and cook for another 10 minutes or until internal temperature is 165F.
Add the peppers back in and pour the sauce over top. Stir and remove from heat.
