Looking for a delicious, one-pan meal that’s as easy as it is flavorful? This Ground Turkey Caprese Skillet is your answer! Made with tender ground turkey, fresh tomatoes, savory mushrooms and gooey mozzarella pearls all in a zesty tomato sauce.
Heat 2 teaspoons of olive oil in a skillet over medium-high heat. Add the tomatoes. Leave undisturbed for 2-3 minutes to blister. Add the garlic. Stir. Continue cooking, stirring occasionally for another 2-3 minutes or until tomato skin just starts to wrinkle. Transfer to a bowl and set aside.
Reduce heat to medium. Add two teaspoons of olive oil, the ground turkey, Italian seasoning and salt. Cook for about 4-5 minutes, breaking into small pieces with a meat chopper or wooden spatula as you go until brown.
Add the onions and mushrooms. Cook for 3-4 minutes, until mushrooms have softened some but not to where they’re releasing liquid. Remove from heat. Drain pan if needed at this time.
Stir in the tomato sauce and blistered tomatoes. Add the mozzarella balls. Cover with a lid for a few minutes to let the cheese melt. If using an oven-safe pan (like cast iron or stainless steel skillet) you can place in the oven at 425 F for about 7-10 minutes.
Serve hot. For a lower carb meal, enjoy as is with your choice of toppings, or mix in cooked pasta (note 1) for a more macro-balanced meal.

Note 1: Cooked pasta pairs perfectly with this ground turkey caprese! And since this dish is naturally lower in carbs, adding a little pasta keeps this dish moderate in carbs and does wonders in making this dish even more enjoyable!I would recommend boiling about 4 oz. of dry pasta (any short noodle variety - I did bowtie here) Serve alongside or mix the cooked pasta directly into the skillet (this will bring carbs for 1/4 of the skillet to about 35g).
