The Lemon Garlic Chicken Skewers are the best summer recipe. Marinated in the most delicious homemade marinade and sprinkled with fresh parmesan cheese, these kabobs are made with tender chicken and perfectly grilled veggies. Throw these easy chicken kabobs on the grill for your next summer cookout or enjoy for an easy weeknight dinner.
Pat the chicken dry with a paper towel and cut into 1-inch pieces.
In a medium bowl, make the marinade by combining the minced garlic, lemon juice, olive oil, honey, oregano, salt and pepper. Toss the chicken in the marinade and cover with saran wrap. Let the chicken marinate in the refrigerator for 30 minutes (or up to 2 hours).
Meanwhile, wash and cut vegetables. Slice the zucchini and yellow squash into 1/2-inch coins. Cut red onion into 1-inch pieces.
Drain the marinade. Thread a piece of chicken onto a skewer and then a piece each of the squash, zucchini and red onion. Repeat until you’re at the end of the skewer, ending with a piece chicken.
When ready, preheat the grill (or grill pan) to medium-high heat. Brush grill grates with oil (or spray with cooking spray). Grill until the chicken is cooked through, about 10-14 minutes, turning occasionally.
Add kabobs to a serving platter. Squeeze fresh lemon juice over top and sprinkle with fresh chopped parsley and grated parmesan. Serve immediately and enjoy!
Notes
You can use any metal or bamboo skewers for this recipe. Metal skewers are sturdy and reusable but note that they will retain heat so please be careful when serving. If using wooden skewers, I recommend soaking them overnight in water (or at least 30 minutes) prior to using.
Be sure to cut your chicken into even-sized pieces so they will cook evenly.
Let chicken marinade for at least 30 minutes or up to overnight.
If you marinade your chicken in the fridge, let it sit at room temperature for ~30 minutes before grilling.
