These Asian Ground Chicken Rice Bowls are super easy to make, ready in just 30 minutes and packed with so much incredible flavor. These bowls are the perfect solution for busy weeknights or enjoy them all week long for meal prep. Plus, you can easily customize these bowls to your taste, dietary or macro preferences.

Ingredients

  • 1 Tbsp olive oil (15g)
  • 12 oz. broccoli cut into small florets
  • 1 lb. ground chicken (or turkey)
  • 3 cloves garlic minced
  • 2 cups cooked sushi rice (336g) packed
  • Sesame seeds for garnishing
  • Sriracha mayo mix 1/3 cup light mayo (80g) with 2 tsp sriracha

Sauce:

  • 1/4 cup chicken broth (60g)
  • 3 Tbsp low sodium soy sauce (45g)
  • 2 Tbsp Hoisin sauce (39g)
  • 1 Tbsp brown sugar (12g)
  • 1 Tbsp cornstarch (8g)

Instructions

  • Add all the sauce ingredients to a pyrex cup or bowl and whisk to combine. Set aside.
  • Heat olive oil in a skillet over medium heat. Once shiny, add the broccoli and a splash of water. Season with a little salt and saute for about 5 minutes or until tender-crisp. Remove from the skillet and set aside.
  • Add the ground chicken to the skillet. Season with salt and pepper. Cook, breaking the chicken into crumbles as you go until it is no longer pink, then drain if needed.
  • Add the broccoli back to the pan and add the minced garlic. Pour the sauce over the chicken and broccoli and bring sauce to a simmer. Stir frequently until the sauce thickens.
  • Serve in bowls with rice, drizzle sriracha mayo over top and sprinkle with sesame seeds.

Time saving tip! Prepare sushi rice in advance to have ready to serve with bowls. Buy pre-cut broccoli.
