This Honey Citrus Shrimp Ceviche is the most refreshing summer recipe. It's packed with juicy chopped shrimp, crisp veggies and so many zesty flavors. This shrimp ceviche is amazing served as a quick appetizer, high protein snack or light meal.

Ingredients

  • 1/4 cup fresh orange juice (60g)
  • 1/4 cup fresh lime juice (60g)
  • 1 Tbsp honey (21g)
  • 1/2 tsp salt or to taste
  • 1 lb. cooked shrimp peeled, deveined and diced
  • 1 red onion (220g) finely diced
  • 1 roma tomato (125g) chopped
  • 1 medium avocado (100g) diced
  • 1 cup cucumber (150g) finely diced
  • 1 cup corn (135g)
  • 1/4 cup cilantro chopped
  • Tostadas or tortilla chips for serving

Instructions

  • Whisk the orange juice, lime juice, honey and salt together in a large bowl. Add the shrimp and toss to coat. Cover and refrigerate for 15 minutes.
  • Meanwhile, go ahead and dice everything! If serving with chips or tostadas, you’ll want to dice finely so you can get a little bit of everything in each bite! ( a food chopper is great for this)
  • Add onion, tomato, avocado, cucumber, corn and cilantro to the bowl with the shrimp and toss to combine. Taste and add more lime juice or salt as desired.
  • Serve ceviche with tortilla chips, tostadas, or in a tortilla and enjoy!

Notes

Store leftover ceviche in a sealed container in the fridge for up to two days. The texture will continue to change as the acid in the citrus juice breaks down the protein, which is why I don't recommend eating the ceviche beyond 1-2 days.
To use raw shrimp: be sure to use fresh shrimp that is high-quality from a reputable source and allow the fresh citrus juice to cure for 30 minutes to 4 hours. (30 minutes will yield a rare fish, with a cured exterior and raw interior. 4 hours will be cured all the way through).
