This 15-Minute Chopped Greek Salad is packed with fresh veggies, tangy feta cheese, salty olives and the best homemade greek dressing. This flavorful salad is perfect paired with your favorite protein for a complete meal or enjoy as a light and refreshing side dish.

Ingredients

Greek Vinaigrette:

  • 1/4 cup red wine vinegar (60g)
  • 1/4 cup olive oil (60g)
  • 1/4 cup fresh lemon juice (60g) ~2 lemons
  • 2 tsp Italian seasoning
  • 1 tsp salt

Chopped Greek Salad:

  • 10 oz. romaine lettuce finely shredded ~2 heads
  • 1 cup cherry tomatoes (150g) halved
  • 4 oz. feta cubed cubed
  • 1 cup cucumber (150g) diced
  • 1/2 cup red onion (180g) finely diced
  • 1/2 cup sliced kalamata olives (67g)
  • 1/4 cup fresh dill chopped
  • To make into a meal: 24-oz. cooked chicken see notes

Instructions

  • Whisk the Greek vinaigrette ingredients together and set aside.
  • To a large bowl or salad spinner add all the ingredients and toss to combine. You can go ahead and toss with the Greek vinaigrette if you’re serving for a crowd, or store in a separate container to drizzle with when ready (salad will stay fresher longer this way).
  • Serve as a side or add chicken or another protein to make a complete meal.

Notes

Side option = vegetarian option. 
*Nutrition below is without the chicken (vegetarian/side option) and includes 2 Tbsp of Greek vinaigrette (30g).
To make vegan: use dairy-free feta cheese.
