20-Minute Ground Beef and Vegetable Stir Fry

This 20-Minute Beef Stir Fry is the best tasty, quick meal! It's made with juicy ground beef, hearty vegetables and the most delicious stir-fry sauce. Serve this super quick dinner with your favorite rice noodles or enjoy as is for a great lower carb option!

Ingredients

  • 1 Tbsp sesame oil
  • 1 Tbsp ginger paste or 3 frozen cubes
  • 10 oz. broccoli florets
  • 3 small carrots (120g) chopped into 1/4-inch pieces
  • 1 small yellow onion (170g) chopped
  • 1 lb. lean ground beef I used 96/4
  • cooked rice noodles optional for serving

For the Sauce:

  • 3 garlic cloves minced (I used frozen)
  • 1/2 cup hot water
  • 1/3 cup low sodium soy sauce (80g)
  • 2 Tbsp brown sugar (36g)
  • 2 Tbsp cornstarch (16g)
  • 1 Tbsp sesame oil (15g)

Instructions

  • In a small bowl, whisk together all the sauce ingredients and set aside.
  • Cook rice noodles according to package directions if making.
  • Meanwhile, add the oil to a wok or skillet and set to medium-high heat. Add the broccoli, carrots and onion and saute for 4-5 minutes or until they start to char and soften. Stir frequently to prevent sticking. Remove from wok and set aside.
  • Add the beef to the wok and season with salt and pepper to taste. Cook over medium heat for 4-5 minutes, crumbling as you go, until no longer pink.
  • Pour the sauce over the beef and bring the sauce to a light simmer.
  • Add the vegetables back to the wok. Toss everything to combine and continue to simmer for a few more minutes so the sauce can thicken some. Serve with rice noodles or enjoy as is. Divide into 4 bowls and enjoy!

Notes

Time saving tip: Use a frozen stir fry blend! Save time and grab a frozen stir fry blend in the freezer section to make this recipe even quicker!
