This Curry Chicken Salad with Almond and Grapes is the perfect meal prep lunch! Bursting with sweet, bold and earthy flavors you will not believe how easy it is to make this high protein chicken salad in just 10 minutes!

Ingredients

  • 3 cups shredded chicken (375g) any kind or click for recipe
  • 1/2 cup celery (70g) finely diced
  • 3/4 cup red grapes (120g) quartered
  • 1/4 cup slivered almonds
  • 2 green onions thinly sliced
  • 1/2 cup Greek yogurt (120g) or light mayo*
  • 2 tsp curry powder
  • 1 tsp sugar helps balance flavors
  • 1/2 tsp salt and black pepper

Instructions

  • In a large bowl, add the chicken, celery, grapes, almonds, green onions, yogurt, curry, sugar, salt and pepper.
  • Mix well to combine.
  • Taste and add any additional salt, sugar, cumin (for more flavor) or yogurt or mayo (for more creaminess) to taste. You can also add some lemon juice or mustard for some acid/tang.
  • Serve as a sandwich, on an open-faced piece of toast, in a tortilla or lettuce wrap, or eat straight up.

Notes

*If you like mayo– sometimes when I make this chicken salad I like to use half greek yogurt, half light mayo to give this chicken salad some of that classic mayo taste. Or if I use all Greek yogurt, I'll spread some light mayo on my bread to still get some of that taste!
