This Healthy Creamy Mexican Shredded Chicken Dip is seriously one of the most delicious dips and guaranteed to be a crowd pleaser! Made with juicy chicken, green chilies, chunky salsa, and loads of cheese this creamy dip is baked to bubbly perfection! Plus, it's packed with protein and gluten-free!

Ingredients

  • 4 oz. reduced fat cream cheese softened
  • 1/2 cup plain Greek yogurt (120g)
  • 1 cup chunky salsa
  • 1 (4-oz.) can green chiles
  • 1 tsp cumin
  • 2 cup Mexican shredded cheese (226g) divided
  • 4 cups shredded rotisserie chicken (400g) or LFF Shredded Chicken works great!
  • 3 green onions sliced, plus more for garnishing

Instructions

  • Preheat the oven to 350 degrees F. Spray a baking dish with cooking spray.
  • In a medium bowl, mix together the cream cheese, greek yogurt, salsa, green chiles, cumin and half of the cheese until combined (I used a hand mixer).
  • Then fold in the chicken and green onions.
  • Transfer the mixture to the baking dish and top with the remaining cheese.
  • Bake for 20 minutes, then broil for 5 minutes, or until the cheese is bubbly and just starting to brown.
  • Sprinkle with more green onions (if desired) and serve with tortilla chips. Then enjoy!

Notes

To make dairy-free: use dairy-free cream cheese, dairy-free Greek yogurt and dairy-free shredded cheese. 
Ways To Switch It Up:
  • Spice it up! Add some diced jalapenos or an extra can of hot chiles for an extra kick! 
  • More carbs! Add a can of black beans or corn to the creamy base for even more Mexican flavor! 
  • Switch up the sauce! Sub the salsa for enchilada sauce for a fun variation of this dip. 
  • Extra herbs! Sprinkle with fresh cilantro for an additional flavor burst.
