Whisk together the pudding mix and milk according to package directions. Add to the fridge to thicken while you make the crumble.*
In a small bowl, mix together all the ingredients for the pecan crumble.
Layer four small glasses with 2 Tbsp of EACH: pistachio pudding, cool whip, crumble, pistachio pudding, cool whip, and lastly the crumble.
Cover and chill for at least an hour and enjoy!

*You will only use about half of the pudding so you can enjoy the rest however you please! Also yummy with crunchy granola or Oreo's crumbled on top!To make dairy-free: use dairy-free milk, dairy-free cool whip (like Truwhip) and dairy-free butter.Store leftover parfaits covered in the fridge for 3-4 days.
