If you’re looking for a yummy, simple, light dessert, try these delicious Pistachio Pudding Parfaits! They’re super easy to make and just the right amount of creamy sweetness and sugary crunch! Perfect for serving when hosting a crowd or an easy after-dinner treat!

Ingredients

  • 1 (1.4-oz.) box sugar-free pistachio pudding mix
  • 2 cups fat free milk or milk of choice (I used Fairlife)
  • 1 cup lite cool whip thawed & divided

Pecan Crumble:

  • 3/4 cup quick oats (60g)
  • 3 Tbsp light butter (42g) melted
  • 3 Tbsp brown sugar (36g) I used Swerve
  • 3 Tbsp chopped pecans (23g)

Instructions

  • Whisk together the pudding mix and milk according to package directions. Add to the fridge to thicken while you make the crumble.*
  • In a small bowl, mix together all the ingredients for the pecan crumble.
  • Layer four small glasses with 2 Tbsp of EACH: pistachio pudding, cool whip, crumble, pistachio pudding, cool whip, and lastly the crumble.
  • Cover and chill for at least an hour and enjoy!

Notes

*You will only use about half of the pudding so you can enjoy the rest however you please! Also yummy with crunchy granola or Oreo's crumbled on top!
To make dairy-free: use dairy-free milk, dairy-free cool whip (like Truwhip) and dairy-free butter.
Store leftover parfaits covered in the fridge for 3-4 days.
