Savor the sweet taste of childhood! These sweet and creamy Orange Creamsicle Overnight Oats are the most delicious summer meal prep recipe! They're packed with fiber, protein, healthy fats and slow digesting carbs. Perfect for travel or breakfast on-the-go!

Ingredients

  • 1/2 cup old fashioned oats (40g)
  • 1/2 cup unsweetened almond milk (120g) or any milk of choice
  • 1/3 cup greek yogurt (80g) plain or vanilla works
  • 3 Tbsp vanilla protein powder (22g)
  • 1 Tbsp sugar-free pancake syrup or pure maple syrup
  • 1 Tbsp orange zest or try lemon zest, 2 Tbsp orange juice or 1/4 tsp orange extract
  • 1 tsp chia seeds
  • 1/2 cup sliced mandarin oranges sliced, fresh or canned

Instructions

  • To a mason jar, meal prep container or bowl, add all the ingredients (save half of the mandarin oranges for topping) and mix well to combined. Then top with the remaining oranges.
  • Cover with a lid or saran wrap and place in the fridge for a minimum of 2 hours. For best, creamiest results, let sit for at least 8 hours.

Notes

Naturally gluten-free! Just be sure your using certified gluten-free oats.
To make dairy-free: use dairy-free Greek yogurt and a plant-based milk.
To make vegan: use a dairy-free yogurt, planted-based milk and plant-based protein powder.
To store: store overnight oats in the fridge in an airtight container for 4-5 days.
