These Healthy Turkey Meatballs in Marinara Sauce are such a great staple recipe! They're easy to make and the perfect protein packed ball of deliciousness to pair with some pasta (or throw in a hoagie) for a quick weeknight dinner ready in 30 minutes!
1cupshredded zucchini, packed with extra liquid squeezed & removed (about 1 medium zucchini)
1/4cupyellow onion, finely diced (30g)
1.5tspdijon mustard
1tspeach: salt, garlic powder, onion powder
1/2tspdried oregano or italian seasoning
1/2tspblack pepper
For serving:
24-oz.good quality marinara sauce - we love Rao’s!
8-oz. angel hair pasta, or pasta of choice optional
Parmesan cheese, freshly grated - optional
Instructions
Preheat the oven to 400 degrees F.
Line a baking sheet with parchment paper or spray with cooking spray.
Add all ingredients to a large bowl and combine.
With your hands, shape 20 small golf ball sized meatballs (about 2 Tbsp/27g each). Then place on the baking sheet.Spray your hands with cooking spray or coat with water to help prevent sticking.
Bake for 16-18 minutes, toss halfway through, or until meatballs are cooked through and the insides are no longer pink.
Meanwhile, prepare the pasta in a pot according to package directions and add the marinara sauce to a skillet. Saute on medium heat until warm.
When meatballs are done, toss with marinara sauce and remove from heat. Serve pasta and meatballs with freshly grated parmesan cheese and enjoy!
Notes
Store these meatballs in an airtight container in the fridge for 4-5 days. To freeze: Place meatballs in the freezer on a parchment lined sheet first. Then place frozen meatballs in a freezer-safe bag and remove air from bag. Freeze for 2-3 months. To reheat, let meatballs thaw in the fridge overnight then bring to room temperature before reheating in the air fryer, microwave or oven. To cook in the air fryer: cook meatballs at 400 degrees F for 12-15 minutes until they are cooked through.To cook on stovetop: spray skillet with olive oil then cook meatballs on medium-high heat in a pan for 12-15 or cooked through.
