This Super Easy Pesto Chicken Salad is the best spring and summer meal prep option! It's ready in just 10 minutes and doesn't requiring any cooking or reheating. A fresh and flavorful protein-packed option that is perfect for meal prep or lunch on-the-go. Serve as a sandwich, salad or enjoy with your favorite crackers! The possibilities are endless!

Ingredients

  • 4 cups cooked & shredded chicken breast (500g)
  • 1/2 cup red onion (80g) finely diced - yellow works too
  • 1/4 cup basil pesto (60g)
  • 1/4 cup light mayo (60g)
  • 1/4 cup greek yogurt (60g) use dairy-free if needed
  • 1 tsp dried basil
  • 1 tsp garlic powder

Instructions

  • In a large mixing bowl, add all the ingredients. Fold until all ingredients are mixed thoroughly.
  • Taste and add any salt and/or pepper to taste (I used rotisserie chicken so didn't need to add any salt!)
  • Serve as a sandwich, on toast, in a wrap or lettuce wrap, over a bed of greens or enjoy as is! 

Notes

To make dairy-free: use dairy-free greek yogurt (or sub for more mayo)
To store: Store your chicken salad in an airtight container. It will last in the fridge for 4-5 days.
How To Eat Pesto Chicken Salad:
  • As a sandwich – The classic way! Place pesto chicken salad between two pieces of bread or croissant for one of your new favorite sandwiches!
  • As open-faced sandwich – Spread chicken salad on a warm, toasted piece of sandwich bread.
  • As a wrap – Grab your favorite kind of tortilla or lettuce wraps and roll this chicken salad inside!
  • On top of a salad – I like to eat this over a bed of leafy greens or romaine lettuce with some crackers on the side. It’s also delicious with diced avocado for some additional healthy fats.
  • Straight up – An easy way is to just enjoy by the forkful. It’s so delicious!
