This Super Easy Pesto Chicken Salad is the best spring and summer meal prep option! It's ready in just 10 minutes and doesn't requiring any cooking or reheating. A fresh and flavorful protein-packed option that is perfect for meal prep or lunch on-the-go. Serve as a sandwich, salad or enjoy with your favorite crackers! The possibilities are endless!
1/2cupred onion (80g)finely diced - yellow works too
1/4cupbasil pesto (60g)
1/4cuplight mayo (60g)
1/4cupgreek yogurt (60g)use dairy-free if needed
1tspdried basil
1tspgarlic powder
Instructions
In a large mixing bowl, add all the ingredients. Fold until all ingredients are mixed thoroughly.
Taste and add any salt and/or pepper to taste (I used rotisserie chicken so didn't need to add any salt!)
Serve as a sandwich, on toast, in a wrap or lettuce wrap, over a bed of greens or enjoy as is!
Notes
To make dairy-free: use dairy-free greek yogurt (or sub for more mayo)To store: Store your chicken salad in an airtight container. It will last in the fridge for 4-5 days.How To Eat Pesto Chicken Salad:
