This Roasted Red Pepper and Chicken Pita Pizza is the perfect quick and easy 10 minute recipe that's great for lunch or dinner! It's the best combination of juicy chicken, creamy cheese and smoky roasted red pepper!

Ingredients

  • 1 pita bread see notes
  • 3 Tbsp pizza sauce (45g) I love Rao’s
  • 1/4 cup shredded mozzarella cheese (28g)
  • 3 Tbsp roasted red peppers (60g)
  • 2.5 oz. chopped grilled or shredded chicken a heaping 1/4 cup
  • fresh basil, for garnishing optional
  • parmesan cheese, for topping optional

Instructions

  • Preheat the oven to 450 degrees F with a pizza stone (if you have one, if not it’s ok!)
  • Brush both sides of the pita lightly with olive oil (or spray with cooking spray if you prefer).
  • Spread the pizza sauce evenly on the pizza then sprinkle the cheese over top. Add the roasted red peppers and chicken. 
  • To cook, place the pizza directly on the pizza stone, or place directly onto the oven rack, with a baking sheet underneath to catch any drips. Bake pizza for 5-6 minutes or until the cheese is melted and the edges are golden brown.
  • Take out and top with fresh basil and parmesan (if desired) then slice and enjoy!

Notes

I used Mission carb balance pita (with 25g of carbs) but use whatever pita bread you prefer here! Regular pita bread is great and doesn’t add that many more carbs. If you need carbs lower, use Joseph’s pita bread or even a tortilla. Flatout Pizza Crust also has very similar macros to what I used and is perfect for this!  
If all your chicken doesn’t fit, just eat the rest alongside it!
To make gluten-free: use a gluten-free pita bread
To make vegan: use vegan-friendly cheese and swap chicken for mushrooms or other vegetables (or omit completely)
