Ingredients

  • 2 cups old fashioned oats (160g)
  • 1/3 cup vanilla protein powder (40g)
  • 1 Tbsp cinnamon
  • 1/4 cup honey (84g)
  • 1/4 cup unsweetened applesauce (60g)
  • 1/4 cup almond butter (56g)
  • 1/4 cup dried blueberries (40g)
  • 2 Tbsp chopped sliced almonds (15g)
  • 2 tsp vanilla extract
  • 1/4 tsp almond extract

Instructions

  • Add all the ingredients (except the dried blueberries and almonds) to a food processor and mix until all ingredients are combined well. Then stir in the dried blueberries.
  • Use a small cookie scoop to scoop out 20 balls (about a heaping tablespoon in size), or however many you wish. After scooping, roll into balls with your hands. Then roll a few of the chopped almonds onto the outer surface of each ball. Rolling tip so it doesn't stick to your hands: I like to wear gloves for easy clean up! Or you can dampen your palms with a little water or nonstick spray to help prevent the sticking.
  • Keep balls stored in an airtight container in the fridge or freezer for up to four weeks.

Notes

To store: keep stored in an airtight container in the fridge or freezer for up to 4 weeks. I would not recommend leaving these out at room temperature.
