It's the perfect weeknight meal when you want something simple, quick, healthy and delicious! It's also great for meal prep and it only requires 6 ingredients!
Preheat the oven to 350 degrees F. Spay a 9x13 baking dish with cooking spray.
Add chicken to a large saucepan and cover completely with water. Season with salt to taste. Bring water to a roaring boil (uncovered) then reduce heat to a simmer, cover with a lid, and cook for about 12 minutes. Once cooked, remove the chicken from the water and shred on a cutting board with 2 forks.
Meanwhile, bring a large pot of salted water to a boil. When boiling, add pasta and cook for until al dente, about 10 minutes. Then drain and set aside.
In a large bowl combine the alfredo sauce and ranch seasoning mix. Then mix in the chicken, pasta, and half the cheese and bacon. Transfer to the prepared baking dish and sprinkle the remaining cheese and bacon evenly across.
Bake for about 15 minutes or until cheese is hot and bubbly. Sprinkle with freshly cracked black pepper and green onions to serve.
Notes
*I used center cut bacon.Pasta: Feel free to use your favorite short pasta here - elbow, bowties, etc. Also, I used normal penne pasta here. To increase fiber, use whole wheat!
