If you're looking for your new favorite warm weather lunch, you've found it! This Rotisserie BLT Chicken Salad combines juicy chicken, crispy bacon, crunchy celery and tomatoes all in a creamy, high protein chicken salad! Perfect for on-the-go and only 200 calories per serving!

Ingredients

  • 4 cups shredded rotisserie chicken (415g)
  • 6 strips of bacon cooked & crumbled*
  • 1.5 cups diced celery (180g)
  • 1/2 cup light mayo (120g)
  • 1/2 cup cottage cheese (113g)
  • 1/2 cup quartered cherry tomatoes (180g)
  • 1/2 tsp black pepper

Instructions

  • In a large bowl, add the rotisserie chicken, bacon, celery, mayo, cottage cheese and black pepper and mix until combined. Taste and add any salt or pepper to your preference. Then mix in the tomatoes until evenly combined. 
  • Enjoy in a sandwich, lettuce wrap, with crackers, or as is! Keep stored in an airtight container in the fridge for 4-5 days. 

Notes

*I used center cut bacon.
