This Golden Roasted Cauliflower with Raisins has a delicious mix of flavors from the curry to the sweet raisins. It makes an awesome lower cab dish served alongside any type of dish!

Ingredients

  • 2 heads of cauliflower (890g) cut into florets
  • Olive oil spray
  • 1 Tbsp olive oil (15g)
  • 2 Tbsp curry powder
  • 1 tsp salt
  • 2 tsp lemon juice
  • 2 Tbsp chopped cilantro or to taste
  • 2 Tbsp golden raisins (20g)

Instructions

  • Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper and spray with cooking spray. 
  • Place the cauliflower florets on the baking sheet and drizzle with the olive oil then spray all over with cooking spray (this helps the olive oil spread & coat further). Toss to evenly coat, then sprinkle with the curry and salt and toss again. 
  • Spread the cauliflower out in an even layer and bake for 18-22 minutes, tossing halfway, or until tender and roasted to liking. 
  • Let cool for a few minutes then toss with the lemon juice, cilantro and raisins. Taste and add any additional salt and pepper to taste.

Notes

To reheat cauliflower the next day, I love popping into the air fryer for 3-4 minutes at 400F.
