This Golden Roasted Cauliflower with Raisins has a delicious mix of flavors from the curry to the sweet raisins. It makes an awesome lower cab dish served alongside any type of dish!
Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper and spray with cooking spray.
Place the cauliflower florets on the baking sheet and drizzle with the olive oil then spray all over with cooking spray (this helps the olive oil spread & coat further). Toss to evenly coat, then sprinkle with the curry and salt and toss again.
Spread the cauliflower out in an even layer and bake for 18-22 minutes, tossing halfway, or until tender and roasted to liking.
Let cool for a few minutes then toss with the lemon juice, cilantro and raisins. Taste and add any additional salt and pepper to taste.
Notes
To reheat cauliflower the next day, I love popping into the air fryer for 3-4 minutes at 400F.
