These Meal Prep Sloppy Joe Sweet Potato Bowls are serious so good and easy! All the flavors you love of classic sloppy joes paired perfectly with delicious roasted sweet potatoes that are perfect for a quick, filling lunch.
Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
Add sweet potato cubes to the sheet pan and toss with olive oil, salt and pepper until sweet potatoes are evenly coated. Bake for about 30 minutes, tossing halfway through, or until roasted to liking. Remove from the oven and set aside.
Meanwhile, in a large skillet, add the olive oil, onion, and both peppers. Cook for 5-6 minutes or until onions become soft.
Add in the ground beef and cook until no longer pink, crumbling as you go. Drain some of the excess liquid if desired and stir in the rest of the ingredients.
Reduce heat to low and let simmer for 5-10 minutes to allow the flavors to come together. Add more water if needed.
To assemble, add 1/4 of the sloppy joe meat (219g) and 1/4 of the sweet potatoes (65g) to four glass containers. Store in the fridge for 5-6 days.
