This single-serve 10-Minute Creamy Chipotle Chicken Ranch Dip is perfect for an afternoon snack or meal! It's tangy, slightly spiced and packed with protein! You can eat this dip with veggies or crackers or throw it in a wrap for a delicious, quick lunch!
1/2cupheaping rotisserie chicken breast (70g) cooked & shredded
1chipotle pepper in adobo saucefinely chopped
1/4cup2% shredded Mexican cheese (28g)
Instructions
Preheat the air fryer (or oven) to 375 degrees F.
In a bowl, mix together the yogurt, cream cheese, ranch seasoning mix, honey and chopped chipotle pepper. Add salt and pepper if desired. Then stir in the chicken.
Stir in half of the shredded cheese. Then transfer chicken mixture to a small 4-oz. dish (grease first). Sprinkle the remaining cheese over top.
Add to the air fryer and cook for 5 minutes or until it’s warmed through and the cheese is melted. (If cooking in the oven, cook for 10-15 minutes or until hot and bubbly.
Serve with tortilla chips, over toast, with roasted potatoes, rice or side of choice. You can also serve in a wrap! To keep lower carb, serve with baby peppers, baby carrots, over a bed of greens or in a lettuce wrap.
