This White Chocolate Snickerdoodle Cookie is the perfect, sweet snack recipe to have on hand! It's the best cookie because it is made with wholesome ingredients that will leave both your sweet tooth and hunger feeling satisfied.
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Mash the banana with a fork. Mix in the milk, coconut oil and vanilla extract until well combined.
To the same bowl, add the oats, protein powder, brown sugar, baking powder and cinnamon.
Add the oat mixture to the prepared baking sheet. Bake for 9-11 minutes or until a toothpick inserted in the center comes out clean. Cookie will look soft and like it needs a little bit longer but it will continue to cook on the hot pan after you remove it from the oven. After 5-10 minutes transfer the cookie to a wire rack or plate and enjoy!
