This White Chocolate Snickerdoodle Cookie is the perfect, sweet snack recipe to have on hand! A delicious cookie as a single serving dessert or snack that packs 16 grams of protein and 4 grams of fiber! It's the best cookie because it is made with wholesome ingredients that will leave both your sweet tooth and hunger feeling satisfied.

Ingredients

  • 1/2 small banana 50g
  • 1 Tbsp milk 15g
  • 1.5 tsp melted coconut oil
  • 1/2 tsp vanilla extract
  • 1/3 cup oats - quick or rolled 27g
  • 2 Tbsp protein powder 15g - about 1/2 scoop
  • 2 tsp Truvia brown sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. 
  • Mash the banana with a fork. Mix in the milk, coconut oil and vanilla extract until well combined. 
  • To the same bowl, add the oats, protein powder, brown sugar, baking powder and cinnamon. 
  • Add the oat mixture to the prepared baking sheet. Bake for 9-11 minutes or until a toothpick inserted in the center comes out clean. Cookie will look soft and like it needs a little bit longer but it will continue to cook on the hot pan after you remove it from the oven. After 5-10 minutes transfer the cookie to a wire rack or plate and enjoy!
