12-oz.regulargluten-free or chickpea short cut pasta - I used Banza chickpea cavatappi
1Tbspolive oil15g
1medium onionfinely diced (215g)
18-oz.chicken sausagesliced - I used Amylu apple & gouda chicken sausage
1medium honeycrisp applecored and finely diced (250g)
4clovesgarlicminced
1tsponion powder
1tspitalian seasoning
1/2tsppaprika
1/2tspsalt
1/2tspblack pepper
4-oz.baby kale or spinach
1cupchicken broth240g
2oz.freshly grated gouda cheese56g
Instructions
Cook pasta in a large pot with salty water according to package directions until al dente. Make sure not to overcook or the pasta will be more breakable. Once al dente, rinse pasta over cool water then drain well. Add the drained pasta back to the empty pot.
Meanwhile, heat olive oil in a large (wide) skillet over medium heat. Add the diced onions and sliced sausage and sauté for about 3 minutes, or until the sausage is golden brown. Then add the apples, garlic, onion powder, Italian seasoning, paprika, salt and pepper. Sauté for another 3-4 minutes or until the apples are tender. Pour in the chicken broth, add the kale, and stir around for about a minute or until the kale has wilted down.
Sprinkle the gouda cheese in the pot with the pasta and toss gently to combine. Then add the sausage mixture and gently toss again to evenly disburse. You can also just serve them separately if you wish. Sprinkle with freshly grated parmesan and freshly cracked black pepper to serve!
