You're gonna love how fast this Sweet Apple Chicken Sausage and Gouda Skillet Pasta comes together! It's easy, cheesy, and comfort food to the max! Great for a quick easy weeknight dinner or to meal prep for the week!

Ingredients

  • 12- oz. regular gluten-free or chickpea short cut pasta - I used Banza chickpea cavatappi
  • 1 Tbsp olive oil 15g
  • 1 medium onion finely diced (215g)
  • 18- oz. chicken sausage sliced - I used Amylu apple & gouda chicken sausage
  • 1 medium honeycrisp apple cored and finely diced (250g)
  • 4 cloves garlic minced
  • 1 tsp onion powder
  • 1 tsp italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4- oz. baby kale or spinach
  • 1 cup chicken broth 240g
  • 2 oz. freshly grated gouda cheese 56g

Instructions

  • Cook pasta in a large pot with salty water according to package directions until al dente. Make sure not to overcook or the pasta will be more breakable. Once al dente, rinse pasta over cool water then drain well. Add the drained pasta back to the empty pot.
  • Meanwhile, heat olive oil in a large (wide) skillet over medium heat. Add the diced onions and sliced sausage and sauté for about 3 minutes, or until the sausage is golden brown. Then add the apples, garlic, onion powder, Italian seasoning, paprika, salt and pepper. Sauté for another 3-4 minutes or until the apples are tender. Pour in the chicken broth, add the kale, and stir around for about a minute or until the kale has wilted down.
  • Sprinkle the gouda cheese in the pot with the pasta and toss gently to combine. Then add the sausage mixture and gently toss again to evenly disburse. You can also just serve them separately if you wish. Sprinkle with freshly grated parmesan and freshly cracked black pepper to serve!
