You guys are gonna LOVE this Oatmeal Cashew Cookie Coconut Protein Balls recipe! They seriously taste just like a chocolate chip oatmeal cookie in protein ball form!! So simple to make and can be made with or without a food processor. An absolute staple in our house!

Ingredients

  • 1.25 cup old fashioned oats (120g)
  • 1.5 scoop vanilla protein powder (45g) I used PEScience
  • 1/2 cup drippy cashew butter (112g) I used American Dream
  • 1/4 cup sugar-free pancake syrup (60g) sub pure maple syrup to make vegan
  • 2 Tbsp chopped walnuts or cashews (15g)
  • 2 Tbsp shredded sweetened coconut (15g) unsweetened works too
  • 1 Tbsp vanilla extract
  • 3 Tbsp mini chocolate chips (45g)
  • Pinch of salt

Instructions

  • Add all the ingredients (except the chocolate chips) to a food processor and mix until all ingredients are combined well (or mix together well in a bowl). Then fold in the chocolate chips. 
  • Use a small cookie scoop to scoop out 16 balls (about a heaping tablespoon in size), or however many you wish. After scooping, roll into balls with your hands. You can dampen your palms with a little nonstick spray to help prevent sticking. 
  • Keep stored in an airtight container in the fridge or freezer.

Notes

To make vegan: sub pancake syrup for pure maple syrup, use a plant-based protein powder, and ensure your chocolate chips are dairy-free.
