These Chocolate Chip Protein Pumpkin Bites are delicious and the most perfect little snack to have on hand for when you just need a little something! They are packed with nutrients, macro-balanced and full of so much yummy pumpkin and chocolate flavor! Another one great during all times of the year, not just the fall!

Ingredients

  • 1 cup old fashioned oats (80g)
  • 1/4 cup vanilla protein powder (31g) I used PEScience (code Laurenfitfoodie to save 10%)
  • 1/4 cup canned pumpkin (60g)
  • 1/4 cup drippy nut butter (56g) I used American Dream (code Laurenfitfoodie to save 10%)
  • 2 Tbsp sugar free pancake syrup (30g) can sub for pure maple syrup
  • 1 Tbsp chia seeds (12g)
  • 1 Tbsp sweetener of choice (12g) I used Swerve
  • 2 tsp cinnamon
  • 2 Tbsp mini chocolate chips (30g)
  • Pinch of salt

Instructions

  • Add all the ingredients (except the chocolate chips) to a food processor and mix until all ingredients are combined well. Fold in the chocolate chips. 
  • Use a small cookie scoop to scoop out 16 balls (about a heaping tablespoon in size), or however many you wish. After scooping, roll into balls with your hands. You can dampen your palms with a little water or nonstick spray to help prevent sticking. 
  • Keep stored in an airtight container in the fridge.

Notes

To make vegan: sub pancake syrup for pure maple syrup; use a plant-based protein powder, ensure your chocolate chips are dairy-free.
